Assemblage 
Made in the strict Champagne tradition of wines called "Blanc de Blancs", the cuvée Rhapsodie is made entirely from Chardonnay from the Côte des Blancs.  This is a vintage Champagne with grapes from one harvest only. Not every year makes a vintage, the quality of the grapes must be particularly exceptional to make a vintage Champagne. 
 
Tasting Note 
Pale gold. Smokey notes with hints of butter on the nose. Great complexity and vinosity with a fine and elegant approach. Still a very pleasant freshness. One for the true connoisseurs. 
 
Food Pairing
Magnificent at the aperitif or to sublime shellfish, smoked salmon or fish with sauce. Its great complexity and richness will be able to please you on even more elaborated cuisine. Makes a perfect substitute for sweet wines with foie gras. Avoid chocolate when drinking with the dessert.
